We were lucky to have my father in law live with us for a few months before he went into a eldercare facility. One of the symptoms of his illness was an increased appetite. Living with my food-loving husband for nearly 20 years, I had been training for this-haha! And man my father in law loved lasagna!

We recently lost him. So henceforth this recipe will be in his memory, and I made one for our family tonight. Enjoy it with your father in law or your favorite lasagna lover soon!
Ingredients:
Red sauce:
Small chopped onion
1 clove garlic
Ground beef
Ground mild sausage (cuz it’s extra)
24 oz jar pasta sauce
Small can tomato sauce
Tbsp italian seasoning
1/2 Tbsp oregano
For the white cheese layer:
16 oz ricotta cheese (or half ricotta and half small curd cottage cheese if thats your thing)
1 egg
Palmful of grated parmesan cheese
1 Cup shredded mozzarella cheese
1 tsp italian seasoning
1/2 tsp pepper
Other ingredients:
9 lasagna noodles, cooked (no bake noodles freak me out 🤷🏼♀️)
2 lbs shredded mozzarella, divided
Grated parmesan and lots of it!
Directions:
Preheat oven to 375 degrees.
Cook the noodles.
Dice onion and saute with garlic in olive oil. Brown both meats. Rinse and drain. Add remaining red sauce ingredients and 1/2 Cup water. (I firmly believe in a saucy lasagna). Set aside.
Mix together white cheese layer ingredients and set aside.
Drain noodles. Build the lasagna.
