Pico de gallo

The pico de gallo on the right was a delicious and colorful addition to these shrimp tacos to add freshness.
Start with the juice of one lime and add a finely diced jalapeno.
Dice your fave tomatoes… romas are my faves for this. I use 4-5. Add in finely diced red onion, 1/2 tsp salt, 1/4 tsp pepper, 1/4 tsp cumin and 1/4 tsp dried cilantro (i just never have fresh 🤷🏼‍♀️). Stir and allow to sit 30 mins to combine. Jazz it ip by adding in diced avocado, corn or even black beans!
Dip tortilla chips in it or put over tacos, quesadillas, enchiladas, eggs… the options are limitless. Enjoy!
