For a recent Saturday night dinner in, we enjoyed an appetizer that kept us all happy with the flavor… and me low-carb! To be honest I saw them at Target (for over $10!) and was inspired to make my own. (For less than half the price). I cheated and used their directions. 😉
Three ingredients and amazing flavor… can’t beat it!
Ingredients and directions:
4 Lg jalapeno peppers, seeded and sliced in half lengthwise
8 pieces thin bacon
8 Tbps cream cheese
Preheat oven to 425. Stuff the peppers with a Tbsp of cream cheese each or however much you can get in there!
Wrap each stuffed pepper with a slice of bacon.
Place on greased or parchment-lined baking sheet cheese side down (that’s important).
Bake for 15 minutes. Turn over to cheese side up. Bake another 15-18 minutes.
The peppers were done perfectly. The cheese stayed in for the most part. The bacon was just crispy enough.
