Keto Bagels

I love bread. Any kind. Noodles I can easily live without. Bread, I need.

It was a couple of weeks into trying Keto that I discovered Keto bagels. Game changer! Now, are they real bagels? No, they are not. But will they scratch that bread itch? Yes, they will!!

Best of all, they are 4 ingredients and done in about 30 minutes. Put cream cheese on them. Make a bagel sandwich. Make a little pizza situation with one. The possibilities!

2 Cups Almond Flour (fine)

3 Cups Mozzarella Cheese (shredded)

4 oz Cream Cheese

2 eggs

Preheat oven to 375 degrees F. Mix almond flour and mozzarella together in a microwave safe bowl. Add cream cheese (just in block is fine). nuke it for 45 seconds; stir. Nuke and stir until it becomes a smooth dough. (Usually takes mine three times). Add eggs and stir until combined (this will be weird, stick with it). Divide into 8 pieces. Roll each into a six inch log and press ends of each log together to make a circle/bagel shape.

Place each on a parchment lined baking sheet and bake for 15-20 minutes until golden.
